Camping Recipes

Post by KSH on Sat 22 Dec 2012 - 20:43

Do you have any good recipes to share that you use while you are away in the van?

Skillet recipes - do you have any of these?

partially boil some potatoes. Using skillet melt some butter or warm olive oil and gently sweat some thinly sliced onions, add some sliced bacon rashers and the potatoes. gently fry with the lid on. When it starts to go crusty and brown add a beaten egg. If you have any black pudding, add that with the potatoes. Add salt & pepper to taste.

My Spanish quick sauce...

cut a small chorizo sausage into small cubes,
Finely cut a red onion,
finely chop 2 cloves of garlic,
finely chop 1 red chile
in a frying pan heat 1 tbspn olive oil add chorizo & onion for about 3 or 4 mins, then add garlic with chile & the carton of chopped tomatoes add 1 tspn of smoked paprika with a squirt of tomato ketchup.
Simmer on low heat for about 10 mins.
Serve with spaghetti or rice.
this will be enough for 2 -4 persons.
